Rewind lounge is THE place to go right now for cocktails in LoDo. Rewind is the the newly renovated and reinvented downstairs bar space that is a casual companion to the intimate, fine dining 1515 Restaurant located upstairs. Rewind offers a range of cocktails both classic and modern, and when we say modern, we mean you quite possibly haven’t imagined cocktails like these.
While many of the cocktails offered at the bar are classics like an Old-Fashioned, Sazerac, or Manhattan, what makes Rewind special is the unique drinks made using molecular gastronomy—a new and tactile way of approaching flavor. New inventions are added to the menu every Molecular Monday, so guests can try something unique each week. Celebrate a long work week with a glass of champagne with strawberry “caviar” pearls in it that rise to the top and release a burst of strawberry flavor with each sip. Or, enjoy a mojito sphere that ruptures to release a mojito in a bubble. The fruit in Rewind’s sangria is mysteriously suspended in the wine, which creates a curiously cool libation. The ideas go on and on and on…
But, let’s not forget the food. Rewind’s food menu is made up of small bites and casual fare, though the full menu from 1515 is available, too. Many of the menu items also feature unique takes on molecular gastronomy, like their Buffalo Mozzarella, a sphere shaped bubble of cheese that releases a roasted garlic flavor when you cut into it. Also, the beef on the menu is a hard-to-find Wagyu beef that is raised in Colorado and comes from 7X Ranch. We suggest trying it seared table-side on a 500 degree river stone.
There’s also a private dining room in the basement, so this location has it all- An unpretentious yet cool bar on the ground floor, a fine dining restaurant upstairs, and a place for your party or corporate event downstairs.
